Have you ever wondered what it would have been like to personally know the beloved Princess Diana? While so much of the world holds an endearing fascination towards the late princess, there are a few who were lucky enough to know her. One of her dearest friends (and royal chef) was Darren McGrady; he recalls the sweet days of knowing and working for the princess.

Princess Diana was truly one the world’s sweethearts. She was breathtakingly beautiful with a contagious smile and a love for people, that inspired many and changed lives. During her life, she chose joy over sadness; love over hate; and sweets over veggies!

Darren, the princess’ personal chef for 11 years, recalls that working alongside her was just as you’d expect it to be: a total blast! He remembers days cooking for the princess’ carb cravings, and laughs while as recounts a common proposal from the princess: “Darren, you take care of the fats, and I’ll take care of the carbs and sweets.” Darren shared that the princess was a total "carb-oholic" and loyal sugar-lover, and begged for them often - while promising to work them off in the gym later.

Princess Di was also a sucker for chocolate (another reason why we continue to love her!) Darren says that she would secretly beg him for his specialty, chocolate mousse, more than he would ever dare to admit. “She was never supposed to eat sweets, but I couldn’t say ‘No,’ to a princess, especially Princess Di! She had a sweet tooth, and a sweet heart!”

Although her preferred foods were rich and decadent, her primary meal was simple. Princess Di commonly ate soft-boiled potatoes tossed in paprika with grilled chicken and, of course, a side salad. This meal may seem somewhat bland, but the princess absolutely loved it! Some of the princess’ other favorite foods were bread and butter pudding, stuffed peppers, and the beloved Sticky Toffee Pudding with Clotted Cream - a specialty created by Darren - just for the queen.

Her two sons, Prince William and Prince Harry, inherited their mother’s sweet tooth, and her appreciation for all things savory and rich. Darren recalls making shepherd's pie, pizza, banana flan, and of course zingy potato skins! He says that, even the boys were royal princes, they still had normal toddler food cravings.

More than 20 years after her tragic death, Princess Di’s food legacy lives on, this time in her sons. Since growing into wonderful young men, they’ve been known to secretly request their mother’s favorites, from time to time; a chocolate mousse, bread pudding, and of course, the sensational Sticky Toffee Pudding with Clotted Cream. Surely, precious memories of their sweet mother flood over them each time they dine on those divine, secretly-cherished, treats.
