Tis the season for picnics and BBQs! The warm weather is finally upon us and with the dawn of a new season comes a plethora of new recipes. It's time for fruit-filled desserts galore and I'm not one bit mad about it!
I'm always reminded of the adorable birthday cakes my mother would make my younger brother each year for his beach birthday parties. Somehow, she would always manage to incorporate delicious fruity dishes that perfectly paired with the cake and with the decor. The cake would typically be some shade of vibrant blue to imitate the beach waves and fruits cut out in fun summer shapes.
While she would never admit to her marvelous party skills, I'm here to tell you that she definitely had a knack for this kind of thing. It was always so well-executed that you'd think she had been in the cake making and party planning business all her life! I only hope to be half as good as she!
Along with the fruity goodness, we would have hot dogs, hamburgers, and loads of fruit-filled punch. While was always a tad jealous that he had all the fun summer bashes each year (winter baby, here!), the fondest memories truly were made during this season.
When I came across this dish from The Magical Slow Cooker, my mouth instantly began to water. I couldn't stop staring at the vibrant yellow pineapple and the yummy, flaky coconut atop it.
Pineapple is one of the most amazing summer fruits so that's just one more reason why I couldn't resist this delicious dish! Any time it is added to a dish, whether sweet or savory, it amps up the flavor profile to a whole new level. Pizza - instantly better. Cakes - instantly better as well. You simply can't go wrong with the tender, sweet pineapple flavoring.
I know for a fact that this will be a regularly prepared dessert for all my summertime gatherings. Check out the following page to see just how to make this flavorful summer slow cooker dessert.
