Unlike the more common pies, it's flavored with honey instead of fruit. This gives it a creamy, comforting flavor that makes it hard to stop at just one slice! It's an added bonus that it is really simple to make and you likely have all the ingredients you need right in your kitchen.

2 1/2 c. heavy whipping cream
1 c. light brown sugar
1/3 c. cornstarch, sifted
1 tsp. salt
3 large egg yolks
1/2 c. honey
2 tsp. vanilla extract
Preheat your oven to 375 degrees. Prepare your pie crust in a deep dish 8 or 9-inch pie pan. Place crust in the fridge until ready to use - do not pre-bake.
In a large bowl, add in whisked egg yolks and set aside for later use. In a medium saucepan, heat the heavy cream, brown sugar, cornstarch, and salt over medium heat until it comes to a rolling boil. Stir the mixture regularly until it begins to thicken. Once the mixture comes back to a full boil, remove from heat.
Slowly begin to whisk small portions of the warm mixture into the bowl of egg yolks. This prevents the sudden cooking of the egg. After the entire pan is mixed into the yolks, add the honey and the vanilla extract.
Pour the custard mixture into the prepared pie crust and bake for 40-45 minutes until it begins to bubble and brown on top. Remove from the oven and set on the counter to cool completely. It will still be jiggly but will slowly firm up as it cools to room temperature.
Place pie in your refrigerator until it is cold and full firm. Sprinkle with sea salt and serve!
