I’ll be the first to admit that chocolate chip cookies are the direct way to my heart. I’m pretty simple when it comes to desserts and I know that if I’ve got a perfectly crafted, soft, gooey chocolate chip cookie in hand, I’m as happy as a clam. Whenever I discover a dessert that portrays similar textures and flavors to my tried and true confectionery love, I immediately jump at the opportunity to give it a try.
This Chocolate Chip Cookie Pie is a monstrosity of deliciousness perfectly packaged into a flaky a pie crust. This pie elevates the appearance of a traditional cookie, yet still packs so much delicious chocolatey, buttery flavoring. It makes my mouth water just thinking about it! 1 unbaked 9-inch pie crust (homemade or store-bought)
2 large eggs
1/2 c. flour
1/2 c. white granulated sugar
1/2 c. packed brown sugar
3/4 c. butter, softened (1 1/2 sticks)
1 c. semi-sweet chocolate chips
1 c. chopped pecans (optional)
vanilla ice cream or sweetened whipped cream for topping
chocolate sauce for topping
Preheat your oven to 325 degrees. Beat eggs in a large mixer on high speed until foamy. Beat in flour, granulated sugar, and brown sugar. Beat in butter. Stir in chocolate chips and nuts. Spoon mixture into your pie crust. Bake for 55-60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on a wire rack and serve slightly warm. Top with ice cream or whipped cream and chocolate sauce. Enjoy!
