This Quick and Easy Blueberry Cheesecake Is The Best Dessert For Those Hot Summer Nights
Tis the season for blueberries galore! This fruit plant thrives in the sweltering hot summer months, providing us with a plethora of delicious, blue morsels of goodness. My mother always told me that blueberries were nature’s candy and I couldn’t agree more with that.
As a child, I spent many summer afternoons the same way each day. I would complete my chores around the house but save my favorite one for last. When it was time for the “fun one”, I would joyfully bounce into the kitchen and rummage through the cabinet until I found the largest bowl we owned.
I’d head straight out of the front door and down our long, gravel driveway until I reached the spot. There, in all its glory, stood our massive blueberry bush. It was always hanging full of fresh, plump blueberries just waiting to be picked!
I don’t remember a time I didn’t eat more berries than I’d put in the bucket! They were so juicy and delicious, I simply couldn’t help myself. Without fail, while I was picking all the berries I could within arm’s reach, my cute little cocker spaniel companion would be working just as fast, but she was nibbling at all the berries closest to the ground. I think she enjoyed them just as much as I.
After I’d gathered as much as I could possibly carry, I’d head back inside, proudly showing off my bounty. It would always astound us at the vast amount we could gather from the bush. We would save a bowl full to eat, freeze multiple gallon bags full, and save another portion for jams and baking.
We never let a summer pass without making as many blueberry-filled desserts as humanly possible. We would always rank our favorites and every summer, the results would be the same. The blueberry cheesecake took the grand prize each and every time.
