Strawberry season is in full swing and I couldn’t be happier about it! There are so many variations of luscious berry recipes that I am trying to find every use possible for them. When I found a recipe for strawberry donuts, I knew it sounded too good to be true. Much to my surprise, they were everything I wanted and more!
The warm, sliced berries throughout create a burst of sweetness with each bite and the strawberry glaze is the perfect element to make this a berry-filled masterpiece. Check out the recipe below to see just how easy it is to make this flavorful summer dessert!
2 c. all-purpose flour
1/2 c. sugar + 2 tsp. sugar, divided
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. buttermilk
2 large eggs
1/4 c. honey
2 tbsp. butter
1 tbsp. vanilla extract
1/2 c. diced strawberries, divided
1 c. confectioner's sugar
Preheat your oven to 425 degrees. Lightly coat a donut pan with cooking spray. To make the glaze, combine the strawberries with 2 tbsp. of sugar. Stir and mash together with a fork. Let the mixture sit at room temperature until the strawberry juice is produced. Add 2-3 tbsp. of this juice mixture to the confectioner's sugar and mix well. If the glaze seems too runny or too thick, add more strawberry juice or confectioner's sugar. Set aside.
For the donuts, combine flour, 1/2 c. sugar, baking powder, and salt into a bowl and whisk until combined. In another bowl, combine buttermilk, eggs, honey, butter, and vanilla, stirring well with a whisk. With a rubber spatula, slowly add wet ingredients to dry ingredients, stirring until mixture is just combined. Add 1 c. strawberries and slowly mix in.
Pipe mixture into a donut pan, filling 2/3 of the way full. Bake for 8 minutes or until a toothpick is inserted and comes out clean. Let cool on a wire rack for five minutes and then dip into the glaze and return to wire rack. Eat immediately!
