It’s the time of year where you simply want to stick around indoors as much as possible and snack on all the foods and treats that make you feel as cozy as humanly possible.
One thing I love about these kinds of meals is that they generally don’t take a ton of prep work to make. The best ones are the kind where you gather the ingredients, chuck them in the crockpot or the oven, and let the appliances do the rest of the work.
Despite the chill in the air, there are some recipes I tend to gravitate toward year round. One side dish that is one of my favorites is roasted potatoes. They’re the ultimate dinner staple and are unbelievably versatile.
The well-known blogger and culinary scientist, Jessica Gavin, created a quick, easy, and speedy version of this beloved side dish that will make your mouth instantly water with just one look.
For her recipe, she opted for the ever-so-popular fingerling potatoes to be the shining star. Due to their size and shape, they don’t require much prep work and cook through relatively quickly. She recommends pairing these with pork, chicken, or beef to make your meal complete.
To make this show-stopping side dish, you’ll need:
1 lb. fingerling potatoes sliced in half lengthwise
2 tbsp. olive oil
1 tbsp. minced garlic
⅔ tsp. kosher salt
2 tsp. chopped chives
Preheat your oven to 400 degrees. Heat a large oven-safe skillet over medium-high heat on the stove. Add olive oil and saute until fragrant. Add in sliced potatoes and stir well until they’re all combined with the oil. Sprinkle with salt.
Transfer the skillet to the oven and cook 20-25 minutes. Once cooked, season with pepper and freshly cut chives.
