Remember in the 1980s when cheese balls were the best thing to bring to any party?
My mother would always have multiple cheese balls already made in the refrigerator around every holiday season. I thoroughly enjoyed them and firmly believe that they need to make a comeback!
They are incredibly simple to make and are a total crowd-pleaser.
This recipe puts a whole new spin on the traditional cheese ball. Unlike the ones I grew up eating, this one is sweet instead of savory.
It can be decorated with any color of sprinkles to fit your specific occasion. The colors used in the video would be absolutely perfect for a birthday party or for a spring gathering!

4 oz. mascarpone cheese
1 c. Funfetti cake mix
1 c. powdered sugar
1/2 c. Funfetti sprinkles
Animal crackers, to serve
In a bowl, combine mascarpone, Funfetti mix, and powdered sugar. Mix on high until everything has a smooth, sticky consistency (a bit like a tub of frosting).
Roll mixture into a ball and place into a bowl filled with the sprinkles. Roll it around until it is fully coated (I suggest moving the bowl quickly in a circle, allowing the centrifugal force to press more sprinkles into the outside of the ball).
Once the ball is evenly coated in sprinkles, reform it to a more rounded ball. Serve with graham crackers, animal crackers, or your favorite cookies!
