If You Thought Ice Cream Sandwiches Were Delicious, This Tasty Twist On A Classic Summer Treat Will Leave Your Mouth Watering
Ice cream sandwiches have been beloved treats for many years. As a child, I would get so excited for the opportunity to sit down with my grandparents and dive into a perfectly cold ice cream sandwich. There’s something so satisfying about the chocolate cake-like texture alongside creamy vanilla ice cream that satisfies folks young and old.
Once I tried this homemade version, it immediately reminded me of my childhood summer days but tasted a whole lot more flavorful! The fudge-like cookie outside and the ice cream center coated in big, Oreo cookie chunks make for a beautiful combination. It makes the meal more fun when you enlist the littlest hands in the preparation of this delightful dessert. Check out the recipe below to see how to make this homemade twist on a summer classic.
INGREDIENTS:
1/2 c. butter
1 1/4 c. semi-sweet chocolate
1 c. flour
1/2 c. cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
2 eggs
chocolate/vanilla ice cream
Oreo cookies, coarsely chopped
DIRECTIONS:
For the chocolate cookie crust preheat your oven to 375 degrees. Line a baking sheet with parchment paper and set aside. In a microwave-safe dish, melt the butter and chocolate together. Set aside to cool. In a large bowl, whisk sugar and eggs together until well-combined.
Whisk in melted chocolate and fold in flour mixture just until the flour completely disappears. Scoop cookie dough onto a prepared baking sheet, pressing down the dough slightly. Bake for 10-11 minutes. Remove from oven and let cool slightly.
Using a round cookie cutter, cut the cookies to make 12 even circles. For the ice cream, allow it to soften for five minutes. Cover the bottom of a 9x13-inch baking dish with plastic wrap. Spread the ice cream evenly in the dish and place in freezer for approximately one hour.
To assemble, cut out ice cream circle using a round cookie cutter that is slightly smaller than the one used earlier for the cookies. Place round slice of ice cream between two cookies and sandwich together.Garnish the edges of the ice cream with the bits of Oreo cookie. Eat immediately or if saving for later, wrap each one individually in plastic wrap and place in the freezer. Enjoy!
