Food has a way of instantly bringing us nostalgic moments simply by its smell or taste. One of my favorite childhood desserts was my grandmother’s homemade carrot cake.
Its delicate, airy cake topped with a creamy, decadent icing was enough to instantly put a smile on my face. It was a crowd pleaser and she always made it for our family gatherings.
While I don’t have that recipe on hand, I crave it from time to time. I scoured the internet in hopes of finding something with similar texture and flavors and came across one that instantly made my mouth water.
This particular carrot cake has a bit of a twist - it’s a poke cake as well! All dessert-lovers know that a poke cake is jam-packed with flavor. The holes poked throughout cause the filling to seep into all its nooks and crannies, filling every square inch with deliciousness.
Even though this version is a bit different from the one I grew up with, it packs a memorable flavor punch. The best part is that it is quite simple to whip up, and your guests will surely devour it in no time at all.
