Crispy Lemon Garlic Butter Scallops Will Instantly Take Any Meal From Drab To Fab In Little To No Time At All

This day and age, you’ll be hard-pressed to find very many people who make a conscious effort to cook meals at home. With the hustle and bustle of the fast-paced lifestyles we all have, it can often be quite difficult to find the time to do such a thing.

More often than not, it’s easier to grab some takeout or hit up your favorite restaurants on a regular basis. For me, one of my favorite dishes to order out is anything seafood related. I adore the flavors so much so that I could eat it every single day and not tire of it!

Sadly, I don’t make the time often enough to prepare those kinds of dishes at home. Some of the reasoning behind this is the lack of time to make something restaurant quality like that. The main reason, though, is out of sheer intimidation.

It can be a bit tricky to cook some seafood dishes at home and make them taste as high quality as your favorite fine dining establishment. If you do enough digging around on the internet, you might luck up and find something that would make you feel as though you’re finally up to the daunting challenge.

I came across and mouthwatering image of scallops on the internet recently that looked absolutely divine! Upon reading the recipe by Karina from Cafe Delites, I was floored at how simple they were to make. I instantly knew I needed to whip up a batch at home for myself.

While scallops seem like a luxurious delicacy, they can be surprisingly affordable to buy. To flavor them up, the ingredients you’ll need are likely already in your kitchen. They’re crispy, juicy, buttery, and everything you could ever want out of a seafood dish. Check out the recipe below to see just how to make this tasty delight!

INGREDIENTS:
2 tbsp. Olive oil
1 ¼ lbs. 3 tbsp. unsalted butter, divided
4-5 large garlic cloves, minced
Salt + pepper
¼ c. dry white wine or broth
2 tbsp. lemon juice
¼ c. chopped parsley

DIRECTIONS:
Heat oil in large cast iron skillet over medium-high heat. Before adding scallops to the pan, pat dry with a paper towel. Place in skillet and season with salt and pepper. Cook for 2-3 minutes before flipping. Flip and fry for another 2 minutes or until crisp and lightly browned and cooked thoroughly. Transfer to a plate.

In the same pan, add butter. Scrape any brown bits on the bottom of the pan. Add in garlic and cook until fragrant - about one minute. Pour in wine or broth to deglaze. Bring mixture to a simmer. Stir in the remaining tablespoon of butter and the lemon juice. Remove pan from heat and return scallops to the pan to warm throughout. Garnish with freshly chopped parsley.
