No Bake Stuffed Cookie Dough Bites - 4 Ways

February 21, 2017

Stuffed Cookie Dough Bites...Need I say more?!

These tasty treats are made with a simple no-bake cookie dough. They are entirely egg-free, so you never have to worry about biting into that irresistible ball of raw cookie dough! You can stuff them with your favorite fixings - literally whatever treats you like.

We used Oreos, Nutella, caramel, Reese's Mini's, but anything goes! Next time I want to try brownie chunks, mini Butterfinger chocolate bars, and scoops of peanut butter.

• 2 stick unsalted softened butter
• 1 cup granulated sugar
• 1 cup packed light brown sugar
• 2 teaspoons pure vanilla extract
• 2 cup all-purpose flour
• 1/2 teaspoon kosher salt
• 2 cups mini chocolate chips

For the fillings:

• Mini Oreo cookies
• Nutella
• Caramels
• Reese Minis

Place butter and sugars into a stand or electric mixer. Beat on medium high for 2-3 minutes, until nice and creamy. Add vanilla, beating until well combined. Add flour, salt then chocolate chips, mixing until just combined.

Take 1 inch scoops of dough and with the tip of a finger, press the center of each dough ball making room for filling. Fill each cookie dough piece with your favorite filling then top with enough dough to cover the filling then form into a ball shape.

Serve bites in a fun serving bowl or plate and serve at room temperature.
