Now, I'm sure you already have a tried and true cobbler recipe that has been in your family for years. We're not trying to get you to replace that good one. This one is so darn good, though, that it's too good to pass by without trying out!
The combination of fresh, tart blackberries and juicy, sweet peaches make this classic Southern dessert one that your friends and family will be talking about for years to come.
1 c. butter, softened
1 c. firmly packed light brown sugar
1 1/2 c. granulated sugar, divided
4 large eggs
1 tbsp. vanilla extract
1 tsp. baking powder
3/4 tsp. salt
3 1/4 c. all-purpose flour, divided
3 (6 oz.) packages fresh blackberries (about 4 cups)
4 c. peeled and sliced fresh ripe peaches
3 tbsp. bourbon
1 c. roasted, glazed pecan pieces
Preheat oven to 350 degrees. With an electric mixer, beat butter, brown sugar, and 1 c. granulated sugar at medium speed until creamy. Add eggs, one at a time, beating just until blended after each addition. Stir in vanilla.
Stir together baking powder, salt, and 3 c. flour; gradually add to butter mixture, beating just until blended. Spread 3/4 of the batter into a greased and floured 9x13 pan; sprinkle with blackberries.
Stir together remaining 1/2 c. granulated sugar and 1/4 c. flour in a medium bowl; add peaches and bourbon, stirring to coat. Spoon mixture over blackberries.
Stir pecans into remaining batter; dollop over peach mixture.
Bake for about an hour or until golden and bubbly. Cool completely on a wire rack (about one hour). Cut into bars and enjoy! :)
