Slow Cooker Potato Soup

October 16, 2018

It’s one of the greatest times of year: CROCKPOT SEASON! The second the leaves start to transition into their beautiful colors, I immediately pull out my beloved crockpot and start compiling the most delicious and cozy seasonal recipes.

There’s nothing better than chucking a bunch of ingredients into your crockpot and heading out the door for the day, knowing that when you arrive home, your meal will be patiently awaiting you.

One of my all-time favorite crockpot recipes for fall is potato soup. This could be due to the fact that it has some of the most dreamy ingredients all combined into a velvety, warm dish.

It also brings a lot of sentimental memories of my childhood, bringing me back to carefree, lighthearted times spent with the ones I love.

There are many ways to spin this classic soup, but recently, I happened upon one I knew I had to try. Food blogger, Ali Martin from Gimme Some Oven, has a slow cooker recipe that is worth jotting down and putting in your “recipe staples” stash.

This version is super rich and creamy, filled to the brim with seasonal flavorings. Even if you happen to find an ingredient or two that you’d normally omit, it’s easily changeable with her version of this dish. Check out just how to make this mouthwatering soup in the video below!
