If You've Been On The Hunt For The Best And Softest Snickerdoodle Cookie You've Ever Had, Look No Further

Tis the season for all things sugary and sweet! It’s the one time of year when you can get away with baking your brains out and no one will ever complain (aside from an occasional family member who is trying to diet this season - who does that anyway?)

For me, cookies are the way straight to my heart. I love cookies of all shapes and sizes and could eat my weight’s worth of them. One thing I’ve tried to do is perfect a few recipes so that I can recreate some of the most delicious ones in the comfort of my little kitchen.

When a chill is in the air, it always makes me think of one cookie in particular: snickerdoodles. There’s just something so cozy and comforting about having vanilla, sugary, and cinnamony goodness wrapped up in one, pillowy cookie. It just doesn’t get any better than that!

I came across a recipe that looked like it would be one of the most promising versions of all and I was not a bit disappointed about it. Former pastry chef-turned-blogger, Allie from Baking a Moment, has a version that is absolutely perfect.

Her recipe will render thick, pillowy, fluffy, soft, cinnamon sugar cookies that will leave your friends and family quickly coming back for seconds and thirds! To see just how she makes these divine treats, check out her recipes below.

INGREDIENTS:
1 c. unsalted butter, softened
1 c. granulated sugar
1 large egg
1 large egg yolk
2 tsp. vanilla extract
2 ¾ c. all purpose flour
¼ c. cornstarch
1 ½ tsp. cream of tartar
¾ tsp. baking soda
½ - ¾ tsp. kosher salt, to taste
½ tsp. ground cinnamon

For the Coating:
¼ c. granulated sugar
2 tbsp. clear sparkling sugar (optional)
2 tsp. ground cinnamon

DIRECTIONS:
Preheat your oven to 400 degrees. Line baking sheets with parchment paper. In a stand mixer, cream butter and sugar together on medium-high speed until pale and fluffy (about 3 minutes). Scrape the bottom and sides of the bowl with a silicone spatula and add in egg, mixing until smooth. Stir in additional egg yolk until smooth.

Add the flour, cornstarch, cream of tartar, baking soda, salt, and cinnamon and mix on medium-low speed until a dough forms.

To make the coating, combine the granulated sugar, sparkling sugar, and ground cinnamon in a shallow dish. Scoop dough in 1.5-tablespoons and roll into a ball. Place the ball in the mixture until all the sides are coated. Place coated balls on prepared baking sheet and bake for 6-10 minutes or until set around the edges but still soft in the middle.
