No matter what season you’re in, Taco Tuesday is always a good idea. If you’re anything like me, those “Tuesdays” sometimes come around more than once a week (oops?). There’s just something so deliciously satisfying about punchy, ethnic flavors all enveloped in a warm tortilla.
It’s an absolute staple meal in my household and something that we enjoy making even for a night in with friends. They’re so customizable that hungry people of all ages can make their own unique twist on their meal.
While I normally tend to do shredded pork for my tacos, I came across a recipe that instantly made me want to switch things up a bit. A blogger named Ali from Gimme Some Oven created a mouth-watering twist on a taco classic, Barbacoa, and it’s one that you’re going to want to make ASAP.
This tender, juicy meat is good wrapped up in a tortilla, on top of a hearty, southwest salad, or even on its own. The flavoring pairs well with a multitude of toppings so it’s perfect for entertaining (and it makes great leftovers, which is always a win in my book!).
