It is unbelievably exciting to know that summer is right around the corner. When this season arrives, it brings with it warm weather, longer and sunnier days, exciting memories, and LOTS of delicious food.
Everywhere you go, it seems as if you can smell a hint of BBQ in the air. There's nothing quite like this time of year! Grills are being used regularly and fresh, tasty dishes are frequently on the menu. We love to be outdoors and enjoy the bounty this season brings.
Growing up in the South, we would have cookouts galore each and every summer. We would invite all of our closest friends and family, fire up the grill, bring out the ice cold cokes and make lifelong memories. Our small, sunburned legs would run wild in the lush, green grass as we played tag and tried to capture lightning bugs in mason jars.
We would play hide-and-seek in the woods behind the house and swing on the rope swing. As soon as we heard those precious words, "Supper's ready! Y'all come eat!", we knew the night was only going to get better from there.
The picnic table would be heavy laden with fresh, smoky meats, char-grilled veggies, macaroni and potato salads and steaming fruit pies. In the background, you could hear the low hum of the ice cream maker, churning the perfectly flavored fresh peach ice cream.
My father was a magician on the grill. Whatever meat he cooked, without fail he would create the most complex and juicy flavors. We would eat until our little bellies could hold no more! That's why they call those times the "good 'ole days".
When summer was over and the colder months were upon us, we'd long for the tastes and smells of summer. When I came across this recipe, I was incredibly excited because I now could create those same, delicious flavors within the warmth of my own home!
