This Pico de Gallo Recipe Contains A Very Unexpected Ingredient. It Only Took One Bite For Me To Fall In Love With This Version

Summer is the best time of the year! The sun is out, the days are longer, and the produce is plentiful! There are farmer's markets galore and everywhere you turn, you're surrounded by brightly colored fruits and veggies. If ever there were a time of year to consume your weight in veggies, this is the season to do it!

Every Saturday in the summer, we make a habit of driving downtown to visit the market. Vendors are set up all over town selling their homemade and homegrown goods. We always bring a ginormous reusable bag with us because we know there's a plethora of goodness just waiting to be purchased. 


My favorite stands are the ones spilling over with fresh produce. My eyes instantly light up with joy as I scan over the options, carefully selecting the perfect options. One of the best vegetables to buy at the market is cucumbers. They're the most beautiful color of deep green and they taste incredible!

I'm always on the hunt for various uses for them. I recently stumbled upon a recipe for a Pic de Gallo where cucumbers were the star and I was elated! I love foods like this and the recipe didn't disappoint at all. Check out the recipe below to see just how to make it.



2 c. cucumber, diced
1 c. tomato, diced
1/2 c. red onion, finely diced
1/4 c. cilantro leaves, chopped
2 tbsp. fresh dill, chopped
1 jalapeno, diced
3 tbsp. freshly squeezed lime juice
salt and pepper, to taste



In a large bowl, toss together the cucumber, tomato, red onion, cilantro, fresh dill, and jalapeno. Pour the lime juice over the mixture and season with salt and pepper. Spoon into serving bowls and enjoy! (Recipe found here.)
