DIRECTIONS:

Preheat your oven to 350 degrees. Prepare a 9x13-inch glass dish by greasing thoroughly with butter or baking spray. In a mixing bowl, combine graham cracker crumbs, rolled oats, melted butter, and brown sugar together. Press evenly onto the bottom of the baking dish. Bake for five minutes. Remove from oven to cool.

In another bowl, blend together cream cheese, brown sugar, white sugar, cinnamon, ginger, cornstarch, and vanilla. Once well combined, pour on top of your cooled crust. Smooth out evenly.

For your apple layer, arrange the thinly sliced and peeled apples atop the cream cheese layer. In a bowl, mix together all purpose flour, rolled oats, brown sugar, cinnamon, and coconut oil. Sprinkle this mixture atop the layer of apples.

Place back in the oven and bake for 40-50 minutes. Once it has cooked, let cool for 15 minutes and refrigerate overnight. Cut into squares, top with vanilla bean ice cream, and drizzle with caramel topping. Enjoy!
