Oh, sweet summertime! Once the peak of warmer weather comes around, I instantly become excited for the new batch of seasonal produce that flourishes in this time of the year. Berries, melons, greens, and veggies flood the supermarkets and produce stands.
It's nearly impossible to walk past a row of fresh produce without gathering a boatload to take home. In my opinion, it's the best time of the year for nature's bounty and it motivates me more than ever to get in the kitchen and cook up a storm!
Among all of the delicious fruits readily available during this season, my family looks forward to strawberries the most. No matter how picky the little people are with everyday meals, once the strawberries come out, their eyes light up with delight and their mouths begin to water at the sight of the bright red berries.
It almost goes without saying that their favorite summertime dessert is strawberry shortcake. It's got everything you could possibly want in a dessert and it is incredibly easy to make. Even the littlest hands enjoy making this fun and easy dessert. Check out our family's favorite version of this classic summertime treat!
1 can of whipped cream
1 can of Pillsbury biscuits
1/2 c. strawberries, chopped
1 tbsp. sugar
1 tbsp. lemon juice
1/2 tsp. vanilla
Bake biscuits according to package instructions. While they are baking, chop your strawberries into bite-sized pieces. In a small bowl, combine the sugar, lemon juice, and vanilla. Add the strawberries to the mixture and stir well, making sure to evenly coat all the berries.
Once biscuits are baked and cooled, crumble them up finely. Get small glasses and begin to layer your ingredients. First, add the crumbled biscuits. Top that with the strawberries and finish off with a generous dollop of whipped cream. Enjoy!
