Sarah, the creator of The Magical Slow Cooker, created a recipe that is one you’ll want to make time and time again. Her lemon pepper chicken is not only simple to make, but is incredibly juicy and tender. Family young and old will devour this chicken dish in no time at all!
¼ c. lemon juice
3 tbsp. Extra virgin olive oil
1 garlic clove, minced
½ tsp. Dried oregano
½ tsp. Salt
½ tsp. Pepper
2.5 lbs. Chicken thighs, bone-in, and skin left on
In the bottom of your slow cooker, add the lemon juice, olive oil, garlic, oregano, salt, and pepper. Mix well to combine. Place your chicken thighs in the mixture and swirl in the sauce, ensuring to cover each piece top and bottom. Cook on HIGH for 4 hours.
Preheat your oven to broil at 500 degrees F. Cover a baking sheet with foil remove chicken from the slow cooker. Place on baking sheet and put in the oven for about ten minutes or until the chicken is a beautiful golden-brown color. Once done, remove and serve with your favorite side dishes! If you would like, you could use the cooking juices left over in the slow cooker for a sauce.
